Why a cookbook?

We are creating a cookbook to address the issue of food waste, as well as improving student nutrition and sustainable eating.

Food Waste is a very real issue, even here in Australia. In NSW, 100,000 people go hungry each year, a quarter of them children, but more than a third of the average household 'red lid' garbage bin is wasted food. Not only does wasted food use up resources, but it releases methane as it breaks down, a gas 25 times stronger than carbon dioxide at trapping atmospheric heat, becoming a huge driver of climate change. If we stop wasting food in NSW, the environmental impact would be the equivalent of taking 117,000 cars off the road.

Plus we can do something about it, our demographic (18 – 24 year olds) is one the biggest food wasters. This cookbook is a project for us to reduce our waste, save us money, and create simple, healthy, cost effective meals.
